Mt Cook salmon cured in sauvignon blanc with cultured oyster cream
Raw Pacific oysters with rhubarb mignonette & dill

Leigh long-line snapper with organic leek, bacon dashi & smoked roe
Roasted brassica with sunflower seed, truffle custard & Barry’s Bay cheddar
Chatham Islands scampi with Spring herbs & fermented tomato

Lemon sole on-the-bone with smoked chili butter
Ruakaka kingfish with barbecued zucchini, nasturtium & macadamia pesto
Bluff long-line hapuka with white asparagus, brown butter & pine cone capers
Merino lamb with asparagus, roasted garlic & black garlic

Artisan cheese course with rye cracker
